I love making truffles even more than I like eating them. We are home-schooling our 14 year old grandson and his first candy assignment was the basic chocolate truffle rolled in Dutch process cocoa. That led to white chocolate truffles rolled in chopped cashews (those are to die for), peanut butter truffles, raspberry truffles (his favorite) and so on. We made close to 2,000 assorted truffles for Christmas presents. His big Christmas present was a good chef's knife which he just about sleeps with. All this has made him seriously consider a career in culinary arts as a chocolatier. Your website is actually one of the resources I have listed in his curriculum. Thanks so much for your site and superb recipes!

SpinningSugar: I am complimented beyond description, Jeanne. And now that my travels of the last four months are slowing, I hope to quickly be able to add more for the two of you to chew upon in new recipes!
